Spiced Vinegar Poached Salmon
Ingredients
- 1 lb salmon, boiled and drained
- 1 cup water from boiling salmon
- 1 cup vinegar
- 6-8 peppercorns
- 1 small piece mace
- 1 pinch allspice
Method
- 1 Boil the salmon until cooked through, then drain it and place in a serving dish.
- 2 Combine the water used to boil the fish with an equal amount of vinegar in a saucepan.
- 3 Add peppercorns, mace, and allspice to the liquid and bring to a boil for a few minutes.
- 4 Pour the hot spiced liquid over the drained salmon and let it cool before serving.
