Spiced Vinegar Poached Salmon

Ingredients

  • 1 lb salmon, boiled and drained
  • 1 cup water from boiling salmon
  • 1 cup vinegar
  • 6-8 peppercorns
  • 1 small piece mace
  • 1 pinch allspice

Method

  1. 1 Boil the salmon until cooked through, then drain it and place in a serving dish.
  2. 2 Combine the water used to boil the fish with an equal amount of vinegar in a saucepan.
  3. 3 Add peppercorns, mace, and allspice to the liquid and bring to a boil for a few minutes.
  4. 4 Pour the hot spiced liquid over the drained salmon and let it cool before serving.
