Spiced Vinegar Cucumber Pickles
Ingredients
- 10 lbs small cucumbers
- 2 handfuls salt
- White wine vinegar (enough to cover cucumbers)
- Vine leaves
- ½ oz mace
- ½ oz sliced ginger
- ½ oz whole black pepper
- 6 cloves
- Few sprigs tarragon
- ½ clove garlic
Method
- 1 Brush cucumbers clean, remove stems, and place in a pan with salt. Let rest for 24 hours, then drain well.
- 2 Submerge cucumbers in boiling white wine vinegar. Cover tightly and let sit for 24 hours until they turn yellow.
- 3 Drain the vinegar. Cover cucumbers with fresh vine leaves. Boil the vinegar and pour it hot over the cucumbers, stirring well.
- 4 Repeat the process of draining, covering with fresh vine leaves, and pouring boiling vinegar over the cucumbers 4-5 times until they turn green.
- 5 Drain cucumbers on a sieve and pack them into glass jars.
- 6 Boil fresh white wine vinegar with mace, ginger, pepper, cloves, tarragon, and garlic for 5 minutes. Pour the hot spiced vinegar over the pickles and seal jars.
