Spiced Vinegar Cucumber Pickles

Ingredients

  • 10 lbs small cucumbers
  • 2 handfuls salt
  • White wine vinegar (enough to cover cucumbers)
  • Vine leaves
  • ½ oz mace
  • ½ oz sliced ginger
  • ½ oz whole black pepper
  • 6 cloves
  • Few sprigs tarragon
  • ½ clove garlic

Method

  1. 1 Brush cucumbers clean, remove stems, and place in a pan with salt. Let rest for 24 hours, then drain well.
  2. 2 Submerge cucumbers in boiling white wine vinegar. Cover tightly and let sit for 24 hours until they turn yellow.
  3. 3 Drain the vinegar. Cover cucumbers with fresh vine leaves. Boil the vinegar and pour it hot over the cucumbers, stirring well.
  4. 4 Repeat the process of draining, covering with fresh vine leaves, and pouring boiling vinegar over the cucumbers 4-5 times until they turn green.
  5. 5 Drain cucumbers on a sieve and pack them into glass jars.
  6. 6 Boil fresh white wine vinegar with mace, ginger, pepper, cloves, tarragon, and garlic for 5 minutes. Pour the hot spiced vinegar over the pickles and seal jars.
