Spiced Tomato And Pepper Chili Sauce

Ingredients

  • 48 ripe tomatoes
  • 8 green peppers
  • 3 cups chopped onion
  • 8 cups cider or wine vinegar
  • 2 cups brown sugar
  • 2 tsp ginger
  • 3 tsp cinnamon
  • 2 tsp allspice
  • 2 tsp cloves
  • 8 tbsp salt

Method

  1. 1 Skin the tomatoes and place them in a large kettle over heat.
  2. 2 Once the tomatoes release their water, remove about half of the liquid.
  3. 3 Add the chopped onions and peppers to the kettle and boil for four hours.
  4. 4 Stir constantly during the final hour to prevent burning.
  5. 5 Add the vinegar, sugar, spices, and salt; simmer until thoroughly mixed.
  6. 6 Bottle the sauce tightly, seal, and store in a dark place.
