Spiced Tomato And Pepper Chili Sauce
Ingredients
- 48 ripe tomatoes
- 8 green peppers
- 3 cups chopped onion
- 8 cups cider or wine vinegar
- 2 cups brown sugar
- 2 tsp ginger
- 3 tsp cinnamon
- 2 tsp allspice
- 2 tsp cloves
- 8 tbsp salt
Method
- 1 Skin the tomatoes and place them in a large kettle over heat.
- 2 Once the tomatoes release their water, remove about half of the liquid.
- 3 Add the chopped onions and peppers to the kettle and boil for four hours.
- 4 Stir constantly during the final hour to prevent burning.
- 5 Add the vinegar, sugar, spices, and salt; simmer until thoroughly mixed.
- 6 Bottle the sauce tightly, seal, and store in a dark place.
