Spiced Sweet Pickled Peaches And Plums
Ingredients
- 7 pounds peaches and/or plums
- 3.75 pounds sugar
- 1 quart vinegar
- 2 ounces whole cloves
- 1 stick cinnamon
Method
- 1 Combine sugar, vinegar, cloves, and cinnamon in a preserving kettle. Boil for 5 minutes after sugar dissolves.
- 2 Prepare fruit: pare peaches and insert a clove into each, or leave skins on (brush peach down, prick plums). Leave plum skins on if preferred.
- 3 Add fruit to boiling syrup in batches. Cook until fruit looks clear but remains firm.
- 4 Remove fruit. Boil syrup until reduced by half, then pour hot syrup over the fruit.
