Spiced Sweet Pickled Peaches And Plums

Ingredients

  • 7 pounds peaches and/or plums
  • 3.75 pounds sugar
  • 1 quart vinegar
  • 2 ounces whole cloves
  • 1 stick cinnamon

Method

  1. 1 Combine sugar, vinegar, cloves, and cinnamon in a preserving kettle. Boil for 5 minutes after sugar dissolves.
  2. 2 Prepare fruit: pare peaches and insert a clove into each, or leave skins on (brush peach down, prick plums). Leave plum skins on if preferred.
  3. 3 Add fruit to boiling syrup in batches. Cook until fruit looks clear but remains firm.
  4. 4 Remove fruit. Boil syrup until reduced by half, then pour hot syrup over the fruit.
