Spiced Sweet Cucumber Pickles
Ingredients
- 2 quarts small cucumbers
- 1/2 cup salt
- Vinegar (enough to cover)
- 1 cup sugar
- Whole mustard seed
- Cloves
- Cinnamon
Method
- 1 Place cucumbers in a dish with salt and cover with boiling water. Let stand overnight.
- 2 Remove cucumbers from brine and place in a large kettle.
- 3 Cover with vinegar, sugar, mustard seed, cloves, and cinnamon. Heat to boiling point but do not boil.
- 4 Can or bottle the pickles while hot.
