Spiced Spinach And Currant Fritters

Ingredients

  • 1 bunch spinach, cleaned and washed
  • 1/2 cup grated bread crumbs
  • 2 eggs, separated
  • 1/4 cup cream (optional)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 cup boiled currants
  • Oil for frying
  • Sugar for serving

Method

  1. 1 Blanch the spinach in boiling water until tender, then drain thoroughly in a colander.
  2. 2 Finely chop the spinach and place in a bowl. Add cinnamon, ginger, bread crumbs, currants, cream, and beaten eggs.
  3. 3 Mix the ingredients until a thick batter forms. Heat oil in a skillet over medium heat.
  4. 4 Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides.
  5. 5 Remove fritters and drain on paper towels. Serve warm, sprinkled with sugar.
