Spiced Spinach And Currant Fritters
Ingredients
- 1 bunch spinach, cleaned and washed
- 1/2 cup grated bread crumbs
- 2 eggs, separated
- 1/4 cup cream (optional)
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 cup boiled currants
- Oil for frying
- Sugar for serving
Method
- 1 Blanch the spinach in boiling water until tender, then drain thoroughly in a colander.
- 2 Finely chop the spinach and place in a bowl. Add cinnamon, ginger, bread crumbs, currants, cream, and beaten eggs.
- 3 Mix the ingredients until a thick batter forms. Heat oil in a skillet over medium heat.
- 4 Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides.
- 5 Remove fritters and drain on paper towels. Serve warm, sprinkled with sugar.
