Spiced Rose And Brandy Cordial

Ingredients

• 1 lb red rose leaves
• 1 quart lukewarm water
• 1 pint rose infusion
• 1 pint white brandy
• ½ lb loaf sugar
• small amount coriander
• small amount cinnamon

Method

1. 1 Infuse rose leaves in lukewarm water for two days in a covered vessel.
2. 2 Squeeze the mixture through a linen bag to extract all liquid.
3. 3 Combine the rose infusion with an equal amount of white brandy.
4. 4 Add sugar, coriander, and cinnamon to a pint of the infusion.
5. 5 Let the mixture set in a jug for two weeks.
6. 6 Filter through blotting paper and bottle.
