Spiced Rice Pudding With Currants

Ingredients

  • 1 quart sweet cream
  • 2 ounces picked rice
  • 1/4 teaspoon mace, ground
  • 1/4 teaspoon ginger, ground
  • 1/4 teaspoon cinnamon, ground
  • Sugar to taste
  • 8 egg yolks
  • 2 egg whites
  • 2 ounces currants, washed
  • 1/4 teaspoon salt
  • Orange peel comfits, cinnamon sticks, or white biscuit crumbs for garnish

Method

  1. 1 Preheat oven to 350°F. Bring the sweet cream to a boil in a saucepan.
  2. 2 Stir in the rice, mace, ginger, cinnamon, and sugar. Let steep until cold.
  3. 3 Strain the mixture into a bowl, then whisk in the egg yolks and whites.
  4. 4 Fold in the currants and salt. Pour into a greased baking dish or pie crust.
  5. 5 Bake until set and golden. Garnish with sugar, orange peel, or biscuit crumbs.
