Spiced Rice Pudding With Currants
Ingredients
- 1 quart sweet cream
- 2 ounces picked rice
- 1/4 teaspoon mace, ground
- 1/4 teaspoon ginger, ground
- 1/4 teaspoon cinnamon, ground
- Sugar to taste
- 8 egg yolks
- 2 egg whites
- 2 ounces currants, washed
- 1/4 teaspoon salt
- Orange peel comfits, cinnamon sticks, or white biscuit crumbs for garnish
Method
- 1 Preheat oven to 350°F. Bring the sweet cream to a boil in a saucepan.
- 2 Stir in the rice, mace, ginger, cinnamon, and sugar. Let steep until cold.
- 3 Strain the mixture into a bowl, then whisk in the egg yolks and whites.
- 4 Fold in the currants and salt. Pour into a greased baking dish or pie crust.
- 5 Bake until set and golden. Garnish with sugar, orange peel, or biscuit crumbs.
