Spiced Rice Pudding In Puff Pastry
Ingredients
- 1/2 lb whole grain rice
- 1 quart whole milk
- 1 cinnamon stick
- 1 strip lemon peel, shredded
- 4 egg yolks
- 2 egg whites
- Moist sugar to taste
- 1 tsp lemon or orange peel, shredded
- 2 tbsp bitter almonds, sliced
- 1/4 tsp grated nutmeg
- 1/4 tsp ground ginger
- 1 package puff pastry
Method
- 1 Wash and pick over the rice. Place in a saucepan with milk, cinnamon stick, and lemon peel.
- 2 Simmer gently, stirring often, until rice is tender and mixture thickens, about 45 minutes.
- 3 Remove cinnamon stick and lemon peel. Transfer rice to a bowl to cool slightly.
- 4 Whisk egg yolks and whites. Stir into rice along with sugar, citrus peel, almonds, nutmeg, and ginger.
- 5 Line a baking dish with puff pastry. Pour in the rice mixture and bake at 350°F until golden, about 30 minutes.
