Spiced Rice Pudding In Puff Pastry

Ingredients

  • 1/2 lb whole grain rice
  • 1 quart whole milk
  • 1 cinnamon stick
  • 1 strip lemon peel, shredded
  • 4 egg yolks
  • 2 egg whites
  • Moist sugar to taste
  • 1 tsp lemon or orange peel, shredded
  • 2 tbsp bitter almonds, sliced
  • 1/4 tsp grated nutmeg
  • 1/4 tsp ground ginger
  • 1 package puff pastry

Method

  1. 1 Wash and pick over the rice. Place in a saucepan with milk, cinnamon stick, and lemon peel.
  2. 2 Simmer gently, stirring often, until rice is tender and mixture thickens, about 45 minutes.
  3. 3 Remove cinnamon stick and lemon peel. Transfer rice to a bowl to cool slightly.
  4. 4 Whisk egg yolks and whites. Stir into rice along with sugar, citrus peel, almonds, nutmeg, and ginger.
  5. 5 Line a baking dish with puff pastry. Pour in the rice mixture and bake at 350°F until golden, about 30 minutes.
