Spiced Potato Croquettes
Ingredients
- 6 medium potatoes, peeled and boiled
- 2 heaping tbsp butter
- Salt to taste
- Cayenne pepper to taste
- 1 tsp grated onion
- 1/8 tsp mace
- 2 egg yolks, beaten
- 2 heaping tbsp cracker crumbs
- Oil for frying
- Parsley for garnish
Method
- 1 Boil peeled potatoes in salted water for 10 minutes. Drain and grate them while hot.
- 2 Stir in butter, salt, cayenne, grated onion, and mace. Mix thoroughly.
- 3 Beat egg yolks and stir into the potato mixture along with cracker crumbs.
- 4 Form into small balls and fry in hot oil until brown, avoiding crowding the pan.
- 5 Drain on paper towels and serve hot, garnished with parsley.
