Spiced Pickled Tomatoes With Onions
Ingredients
- 1 peck ripe tomatoes
- salt (for drawing out moisture)
- sliced onions
- mustard seed
- cloves
- white or black pepper
- red pepper pods (optional)
- strong vinegar
Method
- 1 Scald and peel the tomatoes. Lay them on dishes and cover thickly with salt. Let stand for 24 hours, pouring off extracted liquid occasionally.
- 2 Drain tomatoes on a sifter and gently squeeze out excess juice to prevent spoilage.
- 3 Layer tomatoes, sliced onions, mustard seed, cloves, and pepper in a large jar. Add red pepper pods if desired.
- 4 Pour strong vinegar over the layers until the jar is full. Let sit for a few days before using. Store in a cool place.
