Spiced Pickled Onions
Ingredients
- small onions, peeled
- 1 handful salt
- water
- mace blades
- whole cloves
- nutmeg pieces
- double-distilled white wine vinegar
- salt
Method
- 1 Place peeled onions in a pot, cover with spring water, add a handful of salt, and bring to a boil.
- 2 Strain the onions and remove the outer coats.
- 3 Place onions on a cloth and rub vigorously until completely dry.
- 4 Pack onions into jars with mace, cloves, and nutmeg pieces.
- 5 Boil vinegar with a little salt, let it cool, then pour over the onions.
- 6 Cork jars tightly and seal with a bladder and leather.
