Spiced Pickled Onions

Ingredients

  • small onions, peeled
  • 1 handful salt
  • water
  • mace blades
  • whole cloves
  • nutmeg pieces
  • double-distilled white wine vinegar
  • salt

Method

  1. 1 Place peeled onions in a pot, cover with spring water, add a handful of salt, and bring to a boil.
  2. 2 Strain the onions and remove the outer coats.
  3. 3 Place onions on a cloth and rub vigorously until completely dry.
  4. 4 Pack onions into jars with mace, cloves, and nutmeg pieces.
  5. 5 Boil vinegar with a little salt, let it cool, then pour over the onions.
  6. 6 Cork jars tightly and seal with a bladder and leather.
