Spiced Pickled Mushrooms

Ingredients

  • mushrooms
  • water
  • milk
  • salt
  • white wine vinegar
  • mace
  • pepper
  • nutmeg

Method

  1. 1 Clean mushrooms by rubbing with flannel, then boil in milk and water until tender.
  2. 2 Drain in a colander and rinse with cold water until completely cool.
  3. 3 Soak mushrooms in salted water for 24 hours, then dry thoroughly in a cloth.
  4. 4 Prepare a pickle using white wine vinegar, mace, pepper, and nutmeg.
  5. 5 Ensure the pickle is completely cold before adding the mushrooms to preserve them.
