Spiced Pickled Mushrooms
Ingredients
- mushrooms
- water
- milk
- salt
- white wine vinegar
- mace
- pepper
- nutmeg
Method
- 1 Clean mushrooms by rubbing with flannel, then boil in milk and water until tender.
- 2 Drain in a colander and rinse with cold water until completely cool.
- 3 Soak mushrooms in salted water for 24 hours, then dry thoroughly in a cloth.
- 4 Prepare a pickle using white wine vinegar, mace, pepper, and nutmeg.
- 5 Ensure the pickle is completely cold before adding the mushrooms to preserve them.
