Spiced Pickled Mackerel

Ingredients

  • Mackerel, cleaned and prepared
  • 1 cup vinegar
  • 6 peppercorns
  • 4 cloves
  • 4 bay leaves
  • A scrap of mace
  • 1/8 tsp salt
  • 1/8 tsp prepared mustard
  • Salt, for sprinkling
  • Minced thyme
  • Hot fat for frying

Method

  1. 1 Boil vinegar with peppercorns, cloves, bay leaves, mace, salt, and mustard. Remove from heat and let cool completely.
  2. 2 Sprinkle mackerel pieces with salt and minced thyme. Let sit for about an hour.
  3. 3 Fry the mackerel pieces in hot fat until cooked through. Remove carefully.
  4. 4 Place fried fish in a deep dish. Pour the cooled vinegar mixture over the fish until fully submerged.
  5. 5 Cover the dish with paper and tie securely. Store in a cool place. Reheat as needed before serving.
