Spiced Pickled Green Capsicum
Ingredients
- green capsicum pods
- strong brine
- mace
- nutmeg
Method
- 1 Harvest green capsicum pods with stalks intact. Cut a slit down the side and remove seeds, keeping as much flesh as possible.
- 2 Submerge pods in strong brine for three days, changing the brine daily.
- 3 Remove pods and pat dry with a cloth.
- 4 Boil the used brine with beaten mace and nutmeg. Let cool completely.
- 5 Place pods in a jar and pour the cooled spiced brine over them. Seal tightly.
