Spiced Pickled Green Capsicum

Ingredients

  • green capsicum pods
  • strong brine
  • mace
  • nutmeg

Method

  1. 1 Harvest green capsicum pods with stalks intact. Cut a slit down the side and remove seeds, keeping as much flesh as possible.
  2. 2 Submerge pods in strong brine for three days, changing the brine daily.
  3. 3 Remove pods and pat dry with a cloth.
  4. 4 Boil the used brine with beaten mace and nutmeg. Let cool completely.
  5. 5 Place pods in a jar and pour the cooled spiced brine over them. Seal tightly.
