Spiced Pickled Beets

Ingredients

  • 3 lbs beets
  • 1 stick cinnamon
  • 1 teaspoon whole allspice
  • ½ cup sugar
  • 6 whole cloves
  • 1 pt vinegar
  • ½ cup water

Method

  1. 1 Boil beets until tender, then remove skins.
  2. 2 Tie cinnamon, allspice, and cloves in a cheesecloth bag.
  3. 3 Heat vinegar, water, sugar, and spice bag to a boil.
  4. 4 Add beets to the liquid and boil for 5 minutes.
  5. 5 Pack beets into sterile jars and fill with hot liquid.
  6. 6 Seal jars immediately.
