Spiced Peach Chutney With Ginger And Raisins
Ingredients
- 6 pounds peaches
- 2 cups sugar
- 1 cup raisins
- ½ cup salt
- ½ cup green ginger, chopped
- ¼ cup mustard seed
- ¼ cup red chilies, seeded and chopped
- 2 quarts vinegar
Method
- 1 Pare and slice peaches; stew until soft in 1 quart vinegar.
- 2 Boil sugar and the remaining 1 quart of vinegar into a syrup.
- 3 Add chopped raisins, washed and crushed mustard seed, chopped chilies, chopped ginger, salt, and a little garlic to the syrup.
- 4 Combine with the peaches and boil all together for 20 minutes.
