Spiced Peach Brandy Cordial
Ingredients
- 1 gallon peach brandy
- 5 lbs peaches, pitted and sliced
- 5 pints water
- 2 lbs loaf sugar
- 1 lb peaches
- 24 peach kernels, blanched and pounded
- A little mace
Method
- 1 Boil water, sugar, and 1 lb of peaches until a clear, rich syrup forms.
- 2 Pour the hot syrup over the peach brandy and stir well.
- 3 Add the blanched, pounded peach kernels and mace.
- 4 Let the mixture stand for three weeks in a tightly covered vessel.
- 5 Bottle the cordial for use.
