Spiced Peach Brandy Cordial

Ingredients

  • 1 gallon peach brandy
  • 5 lbs peaches, pitted and sliced
  • 5 pints water
  • 2 lbs loaf sugar
  • 1 lb peaches
  • 24 peach kernels, blanched and pounded
  • A little mace

Method

  1. 1 Boil water, sugar, and 1 lb of peaches until a clear, rich syrup forms.
  2. 2 Pour the hot syrup over the peach brandy and stir well.
  3. 3 Add the blanched, pounded peach kernels and mace.
  4. 4 Let the mixture stand for three weeks in a tightly covered vessel.
  5. 5 Bottle the cordial for use.
