Spiced Oyster Soup With Whipped Cream
Ingredients
- 1 dozen oysters
- Peppercorns
- Allspice
- Water
- Salt
- Whipped cream
Method
- 1 Drain and wash oysters. Place in a hot kettle, shake until gills curl, cover, and simmer gently for 15 minutes.
- 2 Drain the oysters, reserving the liquor. Return the liquor to the kettle with crushed peppercorns, allspice, and water.
- 3 Chop the oysters with a silver knife and return them to the kettle. Simmer gently for 30 minutes, then add salt.
- 4 Strain the broth through two thicknesses of cheesecloth. Reheat and serve with whipped cream on top of each cup.
