Spiced Oyster Liquor Pie
Ingredients
- Oysters, shucked
- Oyster liquor (strained)
- ¼ lb butter
- Flour mixed with water
- Mace
- Pepper
- Salt
Method
- 1 Shuck oysters and strain the liquor. Combine oysters and liquor in a pot over heat.
- 2 Bring to one boil, skimming off any scum. Remove from heat.
- 3 Stir in butter, flour mixture, mace, pepper, and salt to taste.
- 4 Line a deep dish with pie crust. Add the oyster mixture and cover with another layer of crust.
- 5 Cut a hole in the center and decorate. Bake for 45 minutes until golden.
