Spiced Oyster Liquor Pie

Ingredients

  • Oysters, shucked
  • Oyster liquor (strained)
  • ¼ lb butter
  • Flour mixed with water
  • Mace
  • Pepper
  • Salt

Method

  1. 1 Shuck oysters and strain the liquor. Combine oysters and liquor in a pot over heat.
  2. 2 Bring to one boil, skimming off any scum. Remove from heat.
  3. 3 Stir in butter, flour mixture, mace, pepper, and salt to taste.
  4. 4 Line a deep dish with pie crust. Add the oyster mixture and cover with another layer of crust.
  5. 5 Cut a hole in the center and decorate. Bake for 45 minutes until golden.
