Spiced Milk Bread And Butter Pudding
Ingredients
- 1 pint milk
- 1 strip lemon peel
- 1 pinch cinnamon
- 1 bay leaf
- Loaf sugar to taste
- 5 egg yolks
- 3 egg whites
- Thinly sliced bread and butter
- Currants
Method
- 1 Boil milk with lemon peel, cinnamon, and bay leaf for 5-10 minutes. Remove from heat and sweeten with sugar.
- 2 Beat egg yolks and whites together. Gradually whisk in the warm milk mixture until combined.
- 3 Strain the custard through a fine sieve to remove spices and peel.
- 4 Layer thin slices of bread and butter with currants in a pie dish until nearly full.
- 5 Pour the strained custard over the layers. Bake for 30 minutes.
