Spiced Lentil Broth
Ingredients
- 1 pint soaked lentils
- 1 pint water
- 2 ounces butter
- 1/2 teaspoon salt
- 2 cloves
- 6 peppercorns
- A very small piece of mace
- Pepper to taste
Method
- 1 Dissolve butter in a saucepan over medium heat.
- 2 Add lentils, water, cloves, peppercorns, and mace. Bring to a boil.
- 3 Boil for 30 minutes, skimming off any scum that rises to the surface.
- 4 Add salt and pepper, then boil for another 30 minutes.
- 5 Strain the liquid carefully and serve hot with toast or bread.
