Spiced Lentil And Barley Broth
Ingredients
- 1 pint soaked lentils
- 1 tablespoon pearl barley
- 1 quart water
- 1 ounce butter
- 1 shallot, sliced
- 1 flat teaspoon salt
- 3 peppercorns
- 3 allspice
- small strip of lemon peel, tied in muslin
Method
- 1 Place lentils, barley, water, butter, shallot, peppercorns, allspice, and lemon peel in a saucepan.
- 2 Boil gently for two hours, removing scum as it rises.
- 3 Add salt later in the cooking process.
- 4 Strain the broth and serve with sippets of freshly-made toast.
