Spiced Lentil And Barley Broth

Ingredients

  • 1 pint soaked lentils
  • 1 tablespoon pearl barley
  • 1 quart water
  • 1 ounce butter
  • 1 shallot, sliced
  • 1 flat teaspoon salt
  • 3 peppercorns
  • 3 allspice
  • small strip of lemon peel, tied in muslin

Method

  1. 1 Place lentils, barley, water, butter, shallot, peppercorns, allspice, and lemon peel in a saucepan.
  2. 2 Boil gently for two hours, removing scum as it rises.
  3. 3 Add salt later in the cooking process.
  4. 4 Strain the broth and serve with sippets of freshly-made toast.
