Spiced Green Tomato Relish
Ingredients
- 1 peck green tomatoes, sliced
- 8 onions, chopped
- 1 lb bell peppers, seeds removed and chopped
- 1 lb horseradish, chopped
- 1 lb white mustard seed
- 0.5 lb black mustard seed
- 0.5 oz whole cloves
- 0.5 oz stick cinnamon
- 0.5 oz peppercorns
- 1-2 nutmegs
- 4 lbs sugar
- 153 cups best wine vinegar
- 0.5 cup dry mustard (optional)
Method
- 1 Slice green tomatoes and lay them in salt for 24 hours to draw out moisture.
- 2 Drain the tomatoes thoroughly.
- 3 Place drained tomatoes in a granite or porcelain-lined kettle with chopped peppers, onions, and horseradish.
- 4 Sprinkle mustard seeds over the vegetables.
- 5 Tie cloves, cinnamon, peppercorns, and nutmegs in a thin muslin bag.
- 6 Cover the mixture with vinegar, add sugar, and boil until tender and clear.
- 7 Remove the spice bag before serving or jarring.
