Spiced Gooseberry Preserves
Ingredients
- 5 lbs ripe gooseberries
- 4 lbs brown sugar
- 2 cups vinegar
- 2 tbsp cloves
- 3 tsp cinnamon
- 3 tsp allspice
Method
- 1 Wash and pick over the gooseberries.
- 2 Combine gooseberries, brown sugar, vinegar, cloves, cinnamon, and allspice in a large pot.
- 3 Cook slowly over low heat, stirring occasionally, until the mixture becomes rather thick.
- 4 Pour the hot preserves into sterilized glass jars and seal immediately.
