Spiced Fruit Cake With Brandy
Ingredients
- 3/4 lb butter
- 3/4 lb sugar
- 1 lb sifted flour
- 1/2 lb currants, washed
- 1/2 lb raisins, stoned and chopped
- 1/2 lb citron, cut fine
- 1 tsp cloves
- 1 tsp mace
- 1 tsp allspice
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 cup milk
- 1/2 cup brandy
- 4 eggs
- 1 tsp soda
Method
- 1 Beat butter and sugar until creamy.
- 2 Add egg yolks beaten light, along with spices and brandy.
- 3 Roll the fruit in part of the flour.
- 4 Dissolve soda in the remaining flour.
- 5 Stir the flour mixture and milk alternately into the butter mixture.
- 6 Fold in the fruit and finally fold in egg whites beaten to stiff peaks.
- 7 Bake in a moderate oven (350°F) for two hours.
