Spiced Egg Nog

Ingredients

  • 2 quarts heavy cream
  • whole spices (e.g., nutmeg, cinnamon)
  • 12 large eggs
  • sugar to taste
  • 1 pint sherry or sack

Method

  1. 1 Boil cream with whole spices, then remove from heat.
  2. 2 Beat eggs until strained, then stir into the warm cream along with sugar to taste.
  3. 3 Stir in the sherry or sack.
  4. 4 Return mixture to heat and cook gently, stirring carefully to thicken without curdling.
  5. 5 Pour gently into a basin to serve.
