Spiced Currant Preserves

Ingredients

  • 7 lbs fresh ripe currants
  • 5 lbs granulated sugar
  • 1 tbsp ground cloves
  • 1 tbsp ground cinnamon
  • 2 tsp ground allspice
  • 1 pint cider vinegar

Method

  1. 1 Pick, wash, and stem the currants. Place them in a large granite-ware or porcelain-lined kettle.
  2. 2 Add the sugar, cloves, cinnamon, allspice, and cider vinegar to the kettle.
  3. 3 Boil the mixture for one and a half hours, stirring occasionally.
  4. 4 Ladle the hot preserves into jars and seal tightly while cold.
