Spiced Currant Preserves
Ingredients
- 7 lbs fresh ripe currants
- 5 lbs granulated sugar
- 1 tbsp ground cloves
- 1 tbsp ground cinnamon
- 2 tsp ground allspice
- 1 pint cider vinegar
Method
- 1 Pick, wash, and stem the currants. Place them in a large granite-ware or porcelain-lined kettle.
- 2 Add the sugar, cloves, cinnamon, allspice, and cider vinegar to the kettle.
- 3 Boil the mixture for one and a half hours, stirring occasionally.
- 4 Ladle the hot preserves into jars and seal tightly while cold.
