Spiced Candied Walnuts In Syrup

Ingredients

  • fine large walnuts
  • whole cloves
  • cinnamon splinters
  • candied orange peel
  • sugar
  • water

Method

  1. 1 Prick 7-8 holes in each walnut with a bodkin to drain water. Soak in water until they lose their green color.
  2. 2 Boil walnuts in cold water until just soft but not mushy. Spread on a coarse cloth to cool and drain completely.
  3. 3 Insert 3-4 cloves, cinnamon splinters, and candied orange peel into each walnut. Place in pots or glasses.
  4. 4 Boil a thin sugar syrup. Pour the cooled syrup over the walnuts and let stand for 1-2 days.
  5. 5 Pour off the syrup, add more sugar, and boil again. Pour the hot syrup over the walnuts. Seal when cold.
