Spiced Brandy Butter Cookies
Ingredients
- 1 cup butter
- 2 cups sugar
- 1 1/2 cups flour
- 2 eggs
- 1 egg yolk
- 1/8 tsp mace
- 1 tbsp brandy
- 3/4 cup currants (optional)
Method
- 1 Preheat oven to 350°F. Cream the butter and sugar together until light and fluffy.
- 2 Beat in the whole eggs and the extra yolk, then stir in the mace and brandy.
- 3 Mix in the flour until a stiff paste forms. Fold in currants if using.
- 4 Shape the mixture into small cakes and place them on ungreased baking sheets.
- 5 Bake for 15-20 minutes until the edges are lightly golden. Cool before serving.
