Spiced Brandy Butter Cookies

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 1 1/2 cups flour
  • 2 eggs
  • 1 egg yolk
  • 1/8 tsp mace
  • 1 tbsp brandy
  • 3/4 cup currants (optional)

Method

  1. 1 Preheat oven to 350°F. Cream the butter and sugar together until light and fluffy.
  2. 2 Beat in the whole eggs and the extra yolk, then stir in the mace and brandy.
  3. 3 Mix in the flour until a stiff paste forms. Fold in currants if using.
  4. 4 Shape the mixture into small cakes and place them on ungreased baking sheets.
  5. 5 Bake for 15-20 minutes until the edges are lightly golden. Cool before serving.
