Spiced Beef Tenderloin With Herbs
Ingredients
- 1 beef tenderloin, trimmed
- Nutmeg
- Cinnamon
- Salt
- Pepper
- Butter
- Aromatic herbs (sage, parsley, rosemary)
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
Method
- 1 Trim the tenderloin, removing all silverskin. Sprinkle generously with nutmeg, cinnamon, salt, and pepper.
- 2 Place the meat in a covered earthenware vessel with chopped sage, parsley, rosemary, onion, carrot, and celery. Let marinate for a few hours.
- 3 In a pan, melt butter and brown the reserved chopped aromatic herbs. Remove the herbs.
- 4 Add the tenderloin to the pan and simmer for 30 minutes, pricking it often with a fork to baste it in its own juices.
- 5 Serve hot.
