Spiced Beef Tenderloin With Herbs

Ingredients

  • 1 beef tenderloin, trimmed
  • Nutmeg
  • Cinnamon
  • Salt
  • Pepper
  • Butter
  • Aromatic herbs (sage, parsley, rosemary)
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped

Method

  1. 1 Trim the tenderloin, removing all silverskin. Sprinkle generously with nutmeg, cinnamon, salt, and pepper.
  2. 2 Place the meat in a covered earthenware vessel with chopped sage, parsley, rosemary, onion, carrot, and celery. Let marinate for a few hours.
  3. 3 In a pan, melt butter and brown the reserved chopped aromatic herbs. Remove the herbs.
  4. 4 Add the tenderloin to the pan and simmer for 30 minutes, pricking it often with a fork to baste it in its own juices.
  5. 5 Serve hot.
