Spiced Beef Rib Stew

Ingredients

  • 1.5 lbs beef ribs
  • 2 quarts cold water
  • 1 can tomatoes
  • 3 large onions, chopped
  • 6 cloves
  • Pinch sage
  • Pinch celery seed
  • 1/4 orange peel
  • 2 bay leaves
  • 1 pod red pepper
  • 2 cups boiling water

Method

  1. 1 Place beef ribs in a saucepan with 2 quarts cold water. Bring to a boil and cook for 2 hours.
  2. 2 Add tomatoes, onions, cloves, sage, celery seed, orange peel, bay leaves, red pepper, and 2 cups boiling water. Cook for 30 minutes.
  3. 3 Strain the broth, skim off fat, and thicken the gravy. Season to taste.
  4. 4 Pour the thickened gravy over the meat and serve.
