Spiced Beef Rib Stew
Ingredients
- 1.5 lbs beef ribs
- 2 quarts cold water
- 1 can tomatoes
- 3 large onions, chopped
- 6 cloves
- Pinch sage
- Pinch celery seed
- 1/4 orange peel
- 2 bay leaves
- 1 pod red pepper
- 2 cups boiling water
Method
- 1 Place beef ribs in a saucepan with 2 quarts cold water. Bring to a boil and cook for 2 hours.
- 2 Add tomatoes, onions, cloves, sage, celery seed, orange peel, bay leaves, red pepper, and 2 cups boiling water. Cook for 30 minutes.
- 3 Strain the broth, skim off fat, and thicken the gravy. Season to taste.
- 4 Pour the thickened gravy over the meat and serve.
