Spiced Beef Fillet Stew

Ingredients

  • 1 young tender beef fillet
  • White wine (enough to cover)
  • Salt
  • Pepper
  • Tamara spice blend (see note)
  • Beef broth
  • Whole cloves
  • Mace

Method

  1. 1 Clean the beef fillet, removing all skins and sinews. Place in a bowl with white wine and crush/wash it well.
  2. 2 Season with pepper, salt, and Tamara spice blend. Add enough white wine to cover the meat completely.
  3. 3 Cover with a trencher or lid, place a weight on top to keep meat submerged, and steep for two nights and one day.
  4. 4 Remove beef from the wine (discard wine). Place beef in a pot with sweet beef broth (do not use the pickle liquid).
  5. 5 Add whole cloves and mace. Cover tightly and stew on low heat (embers) until very tender.
  6. 6 Serve the beef with the broth it was stewed in, ensuring it is well-covered.
