Spiced Beef And Rice Pilaf
Ingredients
- 2 lbs beef or mutton, cut into bits
- 2 cups rice
- 2 onions, sliced
- 1 small bag of mixed spices
- 1 tbsp Crisco or oil (if meat is lean)
- Fresh coconut, shredded (optional, for garnish)
- Curry powder (optional, for garnish)
Method
- 1 Place meat, onions, and spice bag in a pot. Add enough water to cover. Cook until meat is very tender, about 1.5 hours.
- 2 Remove spice bag. Drain meat, reserving the broth. If meat is lean, add Crisco or oil to the pot.
- 3 Add rice and enough reserved broth to cover rice by 1 inch. Simmer covered until rice is tender and liquid is absorbed.
- 4 Fluff rice with a fork. Garnish with fresh shredded coconut and a sprinkle of curry powder before serving.
