Spiced Baked Custard
Ingredients
- 1 pint milk
- 1 pint cold milk
- 4 ounces loaf sugar
- 8 eggs
- coriander seeds
- cinnamon
- lemon peel
Method
- 1 Boil 1 pint of milk with coriander seeds, cinnamon, and lemon peel.
- 2 Add 4 ounces of loaf sugar and 1 pint of cold milk to the warm milk mixture.
- 3 Beat 8 eggs for 10 minutes, then mix with the milk and sugar.
- 4 Pour the mixture between two pans 6-8 times, then strain through a sieve.
- 5 Skim off the froth, pour into earthen cups, and bake in a hot oven (425°F) for 10 minutes until golden.
