Spiced Baked Custard

Ingredients

  • 1 pint milk
  • 1 pint cold milk
  • 4 ounces loaf sugar
  • 8 eggs
  • coriander seeds
  • cinnamon
  • lemon peel

Method

  1. 1 Boil 1 pint of milk with coriander seeds, cinnamon, and lemon peel.
  2. 2 Add 4 ounces of loaf sugar and 1 pint of cold milk to the warm milk mixture.
  3. 3 Beat 8 eggs for 10 minutes, then mix with the milk and sugar.
  4. 4 Pour the mixture between two pans 6-8 times, then strain through a sieve.
  5. 5 Skim off the froth, pour into earthen cups, and bake in a hot oven (425°F) for 10 minutes until golden.
