Spice Crusted Catfish
Ingredients
- 1/8 cup cornmeal
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 4-ounce catfish fillets
- 2 teaspoons vegetable oil
- 1 lemon or lime, quartered
Method
- 1 Combine cornmeal, oregano, cayenne, thyme, paprika, salt, and pepper on a plate.
- 2 Dredge catfish fillets in the spice mixture, coating both sides.
- 3 Heat vegetable oil in a skillet over high heat.
- 4 Add fish and cook for 4 minutes per side until browned and cooked through.
- 5 Serve immediately garnished with lemon or lime wedges.
