Spice Crusted Catfish

Ingredients

  • 1/8 cup cornmeal
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 4-ounce catfish fillets
  • 2 teaspoons vegetable oil
  • 1 lemon or lime, quartered

Method

  1. 1 Combine cornmeal, oregano, cayenne, thyme, paprika, salt, and pepper on a plate.
  2. 2 Dredge catfish fillets in the spice mixture, coating both sides.
  3. 3 Heat vegetable oil in a skillet over high heat.
  4. 4 Add fish and cook for 4 minutes per side until browned and cooked through.
  5. 5 Serve immediately garnished with lemon or lime wedges.
