Sparkling Currant Mint Punch

Ingredients

  • 1 box currants
  • 3 cups water
  • 2 cups sugar
  • ½ cup crushed ice
  • 1 tablespoon lemon juice
  • 6 mint leaves
  • carbonated water

Method

  1. 1 Place currants and water in a saucepan. Bring to a boil and mash with a potato masher.
  2. 2 Cook for 15 minutes, then strain the liquid into a clean pot.
  3. 3 Add sugar to the strained liquid, bring to a boil, and cook for 5 minutes. Cool completely.
  4. 4 Pour half of the cooled currant syrup into a tall glass.
  5. 5 Add crushed ice, lemon juice, and mint leaves. Fill the glass with carbonated water and serve.
