Sparkling Currant Mint Punch
Ingredients
- 1 box currants
- 3 cups water
- 2 cups sugar
- ½ cup crushed ice
- 1 tablespoon lemon juice
- 6 mint leaves
- carbonated water
Method
- 1 Place currants and water in a saucepan. Bring to a boil and mash with a potato masher.
- 2 Cook for 15 minutes, then strain the liquid into a clean pot.
- 3 Add sugar to the strained liquid, bring to a boil, and cook for 5 minutes. Cool completely.
- 4 Pour half of the cooled currant syrup into a tall glass.
- 5 Add crushed ice, lemon juice, and mint leaves. Fill the glass with carbonated water and serve.
