Spanish Potato And Tomato Stew
Ingredients
- 2 lbs potatoes, diced
- 1 lb Spanish onions, diced
- 1 lb tomatoes, sliced
- 2 oz vermicelli
- 1/2 pint milk
- 1 oz butter
- Salt and pepper to taste
Method
- 1 Dice potatoes and onions. Stew them with butter and a little water until tender.
- 2 Add sliced tomatoes and cook for 10 minutes.
- 3 Season with salt and pepper, then add milk, vermicelli, and more water if needed.
- 4 Simmer for 10 minutes and serve.
