Spanish Potato And Tomato Stew

Ingredients

  • 2 lbs potatoes, diced
  • 1 lb Spanish onions, diced
  • 1 lb tomatoes, sliced
  • 2 oz vermicelli
  • 1/2 pint milk
  • 1 oz butter
  • Salt and pepper to taste

Method

  1. 1 Dice potatoes and onions. Stew them with butter and a little water until tender.
  2. 2 Add sliced tomatoes and cook for 10 minutes.
  3. 3 Season with salt and pepper, then add milk, vermicelli, and more water if needed.
  4. 4 Simmer for 10 minutes and serve.
