Spanish Onion And Root Vegetable Soup
Ingredients
- 3 Spanish onions
- 1 carrot
- 1 turnip
- 1½ pints water
- 1 ounce butter
- 1 teaspoon salt
- 6 peppercorns tied in muslin
- A few sticks of celery
- Toast for serving
Method
- 1 Slice the carrot and turnip. Fry them in butter for a few minutes.
- 2 Place vegetables in a saucepan with quartered onions, water, salt, celery, and peppercorns.
- 3 Boil gently until vegetables are quite tender.
- 4 Remove the peppercorns and reduce the gravy.
- 5 Serve with sippets of toast.
