Spanish Onion And Root Vegetable Soup

Ingredients

  • 3 Spanish onions
  • 1 carrot
  • 1 turnip
  • 1½ pints water
  • 1 ounce butter
  • 1 teaspoon salt
  • 6 peppercorns tied in muslin
  • A few sticks of celery
  • Toast for serving

Method

  1. 1 Slice the carrot and turnip. Fry them in butter for a few minutes.
  2. 2 Place vegetables in a saucepan with quartered onions, water, salt, celery, and peppercorns.
  3. 3 Boil gently until vegetables are quite tender.
  4. 4 Remove the peppercorns and reduce the gravy.
  5. 5 Serve with sippets of toast.
