Southern Spoon Bread
Ingredients
- 3 tbsp Crisco, melted
- 2 cups cornmeal
- 1 quart milk
- 1 tsp salt
- 3 eggs, separated
Method
- 1 Heat milk to boiling point in a saucepan.
- 2 Stir in cornmeal and salt; add melted Crisco and cook for 5 minutes, stirring constantly.
- 3 Remove from heat and cool slightly. Stir in beaten egg yolks.
- 4 Beat egg whites to stiff peaks and gently fold them into the cornmeal mixture.
- 5 Pour batter into a greased 2-quart baking dish.
- 6 Bake in a moderate oven (350°F) for 40 minutes until set and golden. Serve hot.
