Southern Spoon Bread

Ingredients

  • 3 tbsp Crisco, melted
  • 2 cups cornmeal
  • 1 quart milk
  • 1 tsp salt
  • 3 eggs, separated

Method

  1. 1 Heat milk to boiling point in a saucepan.
  2. 2 Stir in cornmeal and salt; add melted Crisco and cook for 5 minutes, stirring constantly.
  3. 3 Remove from heat and cool slightly. Stir in beaten egg yolks.
  4. 4 Beat egg whites to stiff peaks and gently fold them into the cornmeal mixture.
  5. 5 Pour batter into a greased 2-quart baking dish.
  6. 6 Bake in a moderate oven (350°F) for 40 minutes until set and golden. Serve hot.
