Southern Hot Milk Cornbread
Ingredients
- 1 cup fine cornmeal, sifted
- 1½ cups milk
- 2 eggs
- 1 tablespoon butter
- 1 teaspoon baking powder
- 1 teaspoon sugar
- salt
Method
- 1 Scald the milk and pour it over the sifted cornmeal. Let it cool.
- 2 Add the melted butter, salt, sugar, baking powder, and egg yolks. Stir quickly and thoroughly.
- 3 Fold in the egg whites beaten to stiff peaks.
- 4 Pour into a flat pan and bake in a hot oven (425°F) for 30 minutes.
