Sourdough Bread Pancakes
Ingredients
- 2 cups stale bread, chopped
- 1 cup sweet, rich milk
- 1 heaping tsp sugar
- 1 tsp salt
- 2 tbsp melted butter
- 2 eggs, well-beaten
- 1 cup white flour
- 1 tsp baking soda
- 1 cup sour milk
Method
- 1 Chop stale bread to measure 2 cups. Place in a bowl and pour 1 cup sweet milk over it. Let soak for 1 hour.
- 2 Mash the soaked bread in the milk with a wooden spoon. Add sugar, salt, melted butter, and beaten eggs.
- 3 Sift in flour and baking soda. Stir well to combine.
- 4 Add 1 cup sour milk and stir until smooth. Pour batter onto a hot griddle and bake until golden brown.
