Sourdough Bread Pancakes

Ingredients

  • 2 cups stale bread, chopped
  • 1 cup sweet, rich milk
  • 1 heaping tsp sugar
  • 1 tsp salt
  • 2 tbsp melted butter
  • 2 eggs, well-beaten
  • 1 cup white flour
  • 1 tsp baking soda
  • 1 cup sour milk

Method

  1. 1 Chop stale bread to measure 2 cups. Place in a bowl and pour 1 cup sweet milk over it. Let soak for 1 hour.
  2. 2 Mash the soaked bread in the milk with a wooden spoon. Add sugar, salt, melted butter, and beaten eggs.
  3. 3 Sift in flour and baking soda. Stir well to combine.
  4. 4 Add 1 cup sour milk and stir until smooth. Pour batter onto a hot griddle and bake until golden brown.
