Sour Cream Cucumber Dressing

Ingredients

• 1 medium cucumber, peeled and grated
• 1 tsp salt
• 1 cup sour cream
• 1 tsp mustard
• 1 tsp pepper
• 2 tbsp finely chopped onion
• 2 tbsp finely chopped parsley
• Juice of ½ lemon

Method

1. 1 Peel and grate the cucumber. Sprinkle with salt and let stand for one hour.
2. 2 Drain the cucumber thoroughly and place it in a bowl.
3. 3 Beat the sour cream until stiff, then add the drained cucumber.
4. 4 Mix in mustard, pepper, onion, parsley, and lemon juice. Serve immediately.
