Sour Cream Cornmeal Cake

  • 2 cups pastry flour
  • 1½ cups granulated yellow cornmeal
  • ½ cup sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 cups thick sour cream or milk
  • 3 tablespoons melted butter

Method

  1. 1 Sift together the pastry flour, cornmeal, sugar, salt, and baking soda in a large bowl.
  2. 2 Beat the eggs without separating. Stir in the sour cream or milk and melted butter.
  3. 3 Pour the wet ingredients into the dry mixture and beat thoroughly until smooth.
  4. 4 Spread into a large shallow pan and bake for 25 minutes.
