Sour Cream Cornmeal Cake
Ingredients
- 2 cups pastry flour
- 1½ cups granulated yellow cornmeal
- ½ cup sugar
- ½ teaspoon salt
- 1 teaspoon baking soda
- 2 eggs
- 2 cups thick sour cream or milk
- 3 tablespoons melted butter
Method
- 1 Sift together the pastry flour, cornmeal, sugar, salt, and baking soda in a large bowl.
- 2 Beat the eggs without separating. Stir in the sour cream or milk and melted butter.
- 3 Pour the wet ingredients into the dry mixture and beat thoroughly until smooth.
- 4 Spread into a large shallow pan and bake for 25 minutes.
