Sour Cherry Fritters
Ingredients
- 1 cup flour, sifted
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp sugar
- 2 eggs, separated
- 3 tbsp water
- 1 cup pitted sour cherries
- oil for frying
- powdered sugar for serving
Method
- 1 Sift together the flour, baking powder, salt, and sugar in a bowl.
- 2 Beat the egg yolks with water until smooth, then fold in the dry ingredients.
- 3 Gently fold in the stiffly beaten egg whites and the pitted sour cherries.
- 4 Heat oil to 360°F in a deep skillet or fryer.
- 5 Drop spoonfuls of batter into the hot oil and fry for 2 to 5 minutes until browned.
- 6 Drain on paper towels and serve with powdered sugar or fruit sauce.
