Souffle Omelet
Ingredients
- 2 egg yolks
- 1 oz sifted sugar
- few drops vanilla extract
- 2 egg whites
- 1 oz butter
Method
- 1 Beat egg yolks, sugar, and vanilla for 6 minutes until thick.
- 2 Whip egg whites until stiff peaks form.
- 3 Gently fold whites into yolks. Melt butter in a pan over low heat.
- 4 Pour egg mixture into the buttered pan and cook over low heat for 2 minutes.
- 5 Transfer pan to a 425°F oven and bake for 4 minutes until risen.
- 6 Slide onto a warm plate, fold in half, dust with sugar, and serve immediately.
