Souffle Omelet

Ingredients

  • 2 egg yolks
  • 1 oz sifted sugar
  • few drops vanilla extract
  • 2 egg whites
  • 1 oz butter

Method

  1. 1 Beat egg yolks, sugar, and vanilla for 6 minutes until thick.
  2. 2 Whip egg whites until stiff peaks form.
  3. 3 Gently fold whites into yolks. Melt butter in a pan over low heat.
  4. 4 Pour egg mixture into the buttered pan and cook over low heat for 2 minutes.
  5. 5 Transfer pan to a 425°F oven and bake for 4 minutes until risen.
  6. 6 Slide onto a warm plate, fold in half, dust with sugar, and serve immediately.
