Soufflé Omelette
Ingredients
- 8 egg yolks
- 4 egg whites
- 4 additional egg whites
- 1 tablespoon water
- Salt to taste
- Sugar to taste
- Juice of 1 lemon
Method
- 1 Beat the 8 egg yolks with 4 egg whites, water, salt, sugar, and lemon juice.
- 2 Fry the mixture in a pan until set, then transfer to a serving dish.
- 3 Whip the remaining 4 egg whites with sugar to stiff peaks.
- 4 Spread the whipped whites over the fried omelette and bake for a few minutes until puffed and golden.
