Soufflé Omelette

Ingredients

  • 8 egg yolks
  • 4 egg whites
  • 4 additional egg whites
  • 1 tablespoon water
  • Salt to taste
  • Sugar to taste
  • Juice of 1 lemon

Method

  1. 1 Beat the 8 egg yolks with 4 egg whites, water, salt, sugar, and lemon juice.
  2. 2 Fry the mixture in a pan until set, then transfer to a serving dish.
  3. 3 Whip the remaining 4 egg whites with sugar to stiff peaks.
  4. 4 Spread the whipped whites over the fried omelette and bake for a few minutes until puffed and golden.
