Soubise Sauce

Ingredients

  • 1 onion, peeled and halved or quartered
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk or cream
  • Salt to taste
  • Pinch of sugar (optional)

Method

  1. 1 Soak onion pieces in boiling water for 10 minutes, then peel and cut into halves or quarters.
  2. 2 Simmer onions in butter in a small saucepan over low heat until completely tender.
  3. 3 Stir in flour and cook briefly, then add milk or cream and salt to taste.
  4. 4 Simmer until thickened, then pass through a sieve until smooth. Add a pinch of sugar if desired.
