Soft Whole Wheat Dinner Rolls
Ingredients
- 2 1/2 cups whole wheat flour
- 1 tablespoon dry active yeast
- 1 cup non-fat dry milk powder
- 1/3 cup warm water
- 3 tablespoons oil
- 2 teaspoons sugar or honey
- 1 large egg (or 4 egg whites)
- 1 teaspoon salt
- 1 1/4 cups all-purpose flour
Method
- 1 In a large mixer bowl, combine 2 1/2 cups whole wheat flour, yeast, and dry milk powder. Add water, oil, and sugar; mix well for 1 to 2 minutes.
- 2 Turn off the mixer, cover the bowl, and let the dough rest for 10 minutes.
- 3 Add the egg and salt. Turn on the mixer and gradually add the remaining all-purpose flour, 1 cup at a time, until the dough forms a ball.
- 4 Knead for 5 to 6 minutes until the dough is very soft and manageable. If it stiffens, drizzle in a little warm water.
- 5 Shape the dough into rolls. Let them rise until very light.
- 6 Bake at 350°F for 18 to 20 minutes. Do not overbake.
