Soft Paris Rolls

Ingredients

  • 4 cups milk
  • 1/2 cake compressed yeast
  • 6 cups flour
  • 2 egg yolks, well beaten
  • 2 tablespoons melted butter
  • 1 whole egg, well beaten
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda dissolved in hot water
  • 1 tablespoon white sugar
  • Additional sifted flour as needed
  • Butter for pan
  • Melted butter for brushing

Method

  1. 1 Mix milk, yeast, 6 cups flour, and beaten egg yolks. Set aside to rise until very light.
  2. 2 Work in melted butter, beaten whole egg, salt, soda dissolved in hot water, and sugar. Add enough flour to make a soft dough.
  3. 3 Let dough rise for 5 hours.
  4. 4 Roll out, shape into balls, and score each deeply crosswise with a knife.
  5. 5 Arrange close together in a buttered pan. Let rise for 1 hour or more.
  6. 6 Bake for 30 minutes until beginning to turn brown. Wrap in a cloth immediately.
