Soft Paris Rolls
Ingredients
- 4 cups milk
- 1/2 cake compressed yeast
- 6 cups flour
- 2 egg yolks, well beaten
- 2 tablespoons melted butter
- 1 whole egg, well beaten
- 1 teaspoon salt
- 1/2 teaspoon baking soda dissolved in hot water
- 1 tablespoon white sugar
- Additional sifted flour as needed
- Butter for pan
- Melted butter for brushing
Method
- 1 Mix milk, yeast, 6 cups flour, and beaten egg yolks. Set aside to rise until very light.
- 2 Work in melted butter, beaten whole egg, salt, soda dissolved in hot water, and sugar. Add enough flour to make a soft dough.
- 3 Let dough rise for 5 hours.
- 4 Roll out, shape into balls, and score each deeply crosswise with a knife.
- 5 Arrange close together in a buttered pan. Let rise for 1 hour or more.
- 6 Bake for 30 minutes until beginning to turn brown. Wrap in a cloth immediately.
